Ingredients
- Beef Mince 500 grams (1/2 pound)
- Wonton (square) or Jiao-zi/Gyoza (round) wrappers about 80
In a large mixing bowl, blend the following
- Cumin powder 1 to 2 teaspoons
- Nutmeg ½ teaspoon (ground)
- Galangal ¼ teaspoon (ground)
- Ground white pepper ½ teaspoon
Chop / grate, then add to bowl
- Ginger 1 tablespoon, finely grated
- Garlic 1 tablespoon finely minced
- Coriander ¼ cup, leaves & stalks chopped finely
- Spring onion 4 stalks, chopped finely
- Lemon or lime 1 tablespoon juice plus zest of the entire lemon/lime
- Water chestnuts 425 g can / Jicama 1 cup, diced
- Carrot ½ cup, grate with medium blade Benriner (Japanese mandolin)
Sauces, etc – add to bowl
- Sugar 2 teaspoon
- Soy sauce 2 tablespoons
- Oyster sauce 2 tablespoons
- Sambal oelek (or 1 small red chili, finely chopped 1 teaspoon
- Shrimp paste 5 teaspoon
- Shao Hsing wine 2 tablespoons
- Sesame oil 2 teaspoons
